Stuffed Veggie Idli

Preparation Time: 10 mins.
Cooking Time: 20 mins.
Makes 15 idlis

Are you bored of having the same idli again and again. Then why not try this recipe which are stuffed with some spicy vegetables which makes you happy in every bite... These are healthy since they are stuffed with lots of vegetables.







Ingredient
For the idli batter
1 cup rice semolina (idli rawa)
1/4 cup beaten rice (poha)
1/4 cup urad dal (split black lentils)
salt to taste

For the stuffing
Onion - 1 finely chopped
Carrot - 1 grated
Beans - 10 chopped finely
Capsicum - 1/2 chopped finely
Chilli powder - 1/2 tsp
Salt to taste
2 green chillies, finely chopped
5 to 6 curry leaves (kadi patta)
1/2 tsp urad dal (split black lentils)
1/2 tsp mustard seeds ( rai / sarson)
1 tsp oil

Other ingredients
oil for greasing

Method
For the idli batter
1] Wash and soak the idli rawa and poha in water for at least 2 hours.
2] Wash the urad dal thoroughly and soak it in water for at least 2 hours.
3] Blend the rice semolina and poha in a blender to make a smooth batter.
4] Grind the urad dal separately to a smooth paste using a little water.
5] Mix the two batters and add salt. Cover and keep aside for 6 to 8 hours for fermenting.

For the stuffing
1] Start by making the filling. Heat oil in a kadai.
2] Add the green chillies, curry leaves, urad dal and mustard seeds and sauté for a few seconds.
3] Add in onions and green chilli and mix well. Cook for 2 mins.
4] Add in chilli, ,salt and and mix well. Add in all the vegetables and sauté for 5 mins.
5] Pour a splash of water and mix well. Cover the pan and let it cook for 10 mins. Filling is done.

How to proceed
1] Place a spoonful of the idli batter into each greased idli mould.
2] Place a portion of the stuffing over the idli batter.
3] Pour a spoonful of idli batter to cover the stuffing on each idli mould.
4] Steam for 10 to 12 minutes. Wait for 1 minute and take out the idlis.

Cheese Chilli Toast

Cheese Chili Toast - Tasty cheese toast spiced with chilies and ginger. an easy breakfast to prepare and serve.

Ingredients
4-5 slices of brown or whole wheat bread
3 to 4 tbsp grated cheese - mozzarella, cheddar or regular cheese
1 green chili, finely chopped
½ tsp grated or minced ginger
salt and black pepper as required
salted butter at room temperature for spreading on the bread, as required

Method
1] grate the cheese in a bowl. add the chopped chilies and ginger. also add salt and pepper and mix well.
2] slice the bread into triangular or rectangular slices. if you want you can slice the edges.
3] first make the tava or pan hot and then reduce the flame.
4] then keep the bread slices on the tava and toast till lightly.
5] take the bread slices, butter them on both sides lightly.- Pile your cheese mixture onto the bread slices.
6] again place the bread slices on the tava and toast till golden. keep the flame to low. make sure the bread does not get burnt.
